Adjust the grain size to the bluntness of your knife
A sharpening stone is available with different grain sizes. The blunter your knife, the coarser the grain must be to get your knife sharp again. First sharpen your knife with a coarse grit (200 - 600) and then you can finish it with an increasingly fine grit (3000 - 8000).
